Spelt is an ancient grain dating back to the bronze age. Also refered to hard-grained, heirloom wheat, Spelt is tangy and mildly nutty and can be used up to 50% of the grist. Spelt has grown in popularity among small craft brewers, particularly for Hazy IPAs.
